Chicken Strips

4 chicken breasts, cut into strips
1/2-3/4 cup flour
1/2 t salt
1/4 t pepper
1 t parsley
2-3 eggs
2 T milk
1-1 1/2 package saltine crackers, crushed
1/2 c Parmesan cheese
Vegetable oil for deep-frying

Get out three bowls. In first, mix flour, salt, pepper, and parsley. In second, mix egg and milk. In third, mix crackers and Parmesan cheese. Dip chicken in flour mixture, then in egg mixture, then in cracker mixture. Set aside. Heat oil in large skillet. Deep fry several minutes until golden brown and white all the way through thickest part of meat. Let dry on paper towels. Leftovers can be used to make He'll Love You Forever Chicken Parmesan.
