Spicy Welsh Rabbit

1 can (13 oz) evaporated milk
12 oz cheddar cheese, sliced
3 T water (or beer)
2 t prepared mustard
White pepper to taste
12 thin slices French bread, toasted
2 ripe tomatoes, sliced thin
Paprika

Mix milk, cheese, water, mustard & pepper and heat over low in a saucepan, stirring often until cheese is melted and mixture is smooth. Remove from heat, let stand 5 minutes. Arrange toast and tomatoes in alternating layers. Pour over toast & tomato slices. Sprinkle with paprika. (Serves 4)
