I enjoy cake decorating, but when baking, cakes will normally rise up in the middle, causing an uneven surface. There is a tool you can buy that will evenly cut off the top; however, thanks to my wonderful mother, I now know a better way. Simply wrap your cake pans in soaked, rolled newspaper and tape it down with masking tape before filling. Then, fill the pan and bake as usual. The wet paper will cause the cake to bake much more evenly, leaving a much flatter surface for decorating.
