He'll Love You Forever Chicken Parmesan

Serves 2

4 cups egg noodles, cooked to package directions
2 thick slices mozzarella cheese
2 single chicken breasts
1 small onion (about ½ cup), chopped
1 clove garlic, minced
1 t sugar
1t oregano
½ t salt
¾ t basil
½ t marjoram
1 (16 oz - 28 oz) can diced stewed tomatoes, un-drained
1 (8oz) can tomato sauce
¼ cup flour
1/8 t salt
1/8 t pepper
½t parsley
1-2 eggs
1t milk
½ package saltine crackers, crushed
3 T Parmesan cheese
Olive or vegetable oil for deep-frying

In large saucepan, sauté onion in olive oil till tender; garlic, sugar, oregano, ½ t salt,
basil, marjoram, tomatoes, and tomato sauce. Mix well and bring to a
boil. Reduce heat and simmer while making other preparations.

In med saucepan, boil noodles.

Get out three bowls. In first, mix flour, salt, pepper, and parsley. In second, mix egg and milk. In third, mix crackers and Parmesan cheese. Dip both breasts in flour mixture, then in egg mixture, then in cracker mixture. Set aside. Heat oil in large skillet. Deep fry breasts several minutes until golden brown and white all the way through thickest part of meat. Let dry on paper towels. In small casserole, put in noodles. Place chicken breasts on top, top with mozzarella cheese, cover with tomato sauce, and (optional) sprinkle generously with Parmesan cheese. Bake at 375 degrees for 5 - 10 minutes until cheese is melted and it is all piping hot. Great sides are garlic bread and salad. Tip: The deep fried, breaded chicken makes great chicken strips by themselves. For this recipe, instead of making the chicken breasts, just use leftover chicken strips from a previous meal.
