This is one of our Thanksgiving favorites!
1 can Bruce yam (29oz) -drained and mashed
3/4 c. sugar
2 1/2 Tb melted butter
2 eggs (slightly beaten)
1 Tb vanilla
1/2 tsp salt
Mix all ingredients. Pour into greased dish.
Topping:
21/2 Tb melted butter
1 c. brown sugar
1/3 c flour (or use Red Mill gluten-free 1-to-1 baking flour)
1 c chopped pecans
Mix and pour over top of yam mixture. Bake at 350 for 35 min.
