Flan

1 c sugar
4 c milk
8 eggs
¾ c sugar
1 t vanilla
Pinch of salt

Caramelize 1 c sugar in a heavy pan. Pour into a mold (or a round metal pan .) Keep mold standing in hot water. Then pour in caramelized sugar to coat bottom of mold. Preheat oven to 350 degrees. Heat the milk until filmy. Remove from heat and cool. Beat sugar into eggs. Add milk, vanilla and salt to egg mixture. Mix well and strain into the caramelized mold. Set mold(s) into a casserole dish of water and bake this way for 1 hour or until knife inserted comes out clean. Chill, invert and serve.
