1 c cottage cheese
1 T lemon juice
2 T oil
2 T mayonnaise
½ t salt
¼ t tarragon
¼ c buttermilk
1 t vinegar
2 T chopped chives (optional)
Mix all ingredients except chives in a blender until smooth and creamy. Add chives. This is low in saturated fat and great on baked potatoes, borscht, potato pancakes or black bread. Makes 1 ½ cups.
