Goat Cheese Stuffed Chicken Salad
1 (4 oz) package goat cheese
4 chicken breasts
package of mixed lettuce
2 cups frozen corn
1 red bell pepper, diced
2-3 green onion stalks, chopped
1-2 avocados
lime juice
tortilla chips (optional)
Slice chicken breasts to make a pocket. Fill each with 1 oz goat cheese. Grill. Meanwhile, chop avocado and liberally sprinkle with lime juice; set aside. Fry up corn, red bell pepper and green onion in butter. To serve: Slice grilled chicken and place on a bed of lettuce, covered with corn mixture and garnished with avocado. Use lime juice to season.

7 Layer Salad
In a 9x13 casserole dish, layer as follows:
Layer 1: Romaine lettuce or Spring Mix
Layer 2: Frozen peas
Layer 3: Red onion, sliced thin or chopped
Layer 4: Crispy bacon, crumbled
Layer 5: Tomato slices (arrange appealingly)
Layer 6: Boiled egg slices (arrange appealingly)
Layer 7: Cheddar cheese, shredded
Optional additional layers:
Mushrooms
Mayonnaise or Salad dressing of your choice
Croutons or Corn Bread cubes (Leave out for gluten-free dish.)
Carrot, slivered or shredded
Slivers of bell pepper, green, yellow or red
Cucumber slivers
Bleu cheese, crumbled
Tuna (instead of bacon)
Scallions
Roasted chicken cubes
Cottage cheese
Banana peppers or Greek pepperoncini
Yellow squash slivers
Zucchini slivers
Fruit, such as raisins, dried cranberries, currants, etc...
Nuts, such as slivered, honey-coated almonds, peanuts, cashews, etc...
USE YOUR IMAGINATION!

Cranberry Spinach Salad
1 T butter
¾ c blanched, slivered almonds (To blanch, drop almonds for 10 seconds into boiling water, remove and place in ice water immediately to cool quickly.)
1 1b Spinach
1 c dried cranberries
2 T toasted sesame seeds
1T poppy seeds
½ c white sugar
2 t fresh, minced onion
¼ t paprika
¼ c white wine vinegar
¼ c cider vinegar
½ c vegetable oil
Sliced green onion
Feta cheese, crumbled
In a saucepan, melt butter and sauté almonds. In a bowl, toss together spinach, almonds, cranberries, green onion and feta cheese. In a medium bowl, whisk together sesame seeds, sugar, onion, paprika, vinegar(s) and vegetable oil. Mix until sugar is completely dissolved. Toss together just before serving.

Favorite Tossed Salad

Top with your favorite dressing and enjoy.
